Method of vinification

Cedric Vincent carried out a part of his carrier in Beaune. There, he discovered and appreciated the methods of vinification of the great wines from Burgundy, and he decided to innovate in Beaujolais. Today, he works with grape variety that are typical from this region, the Gamay noir and the Chardonnay, and his wines are widely recognized.
